Au Gratin Potatoes

Serves 8 at 3 pts per serving

Ingredients:
1 serving cooking spray
1 tbsp butter
1 medium onion (thinly sliced)
2 tbsps all purpose flour
2 cups FF skim milk (I used 2% but it added points)
1 cup low fat shredded cheddar cheese (I used Sargento RF mexican blend)
2 pounds uncooked yukon gold potatoes thinly sliced
1 tsp table salt
1/4 tsp black ground pepper

Directions:

Preheat to 375.� Coat a 2 quart covered baking dish with cooking spray.

Melt butter in large pot over medium heat.� Add onion and cook, stirring ocassionally until onion begins to brown (about 5 min).� Stir in flour; add milk slowly, stirring.� Add potatoes and stir to mix.� Bring to a boil.� Stir in 3/4 c cheese, salt & pepper.**

Pour mixture into prepared baking dish and level out surface.� Bake for 1 hour, uncovered.� Cover and bake until potatoes are fork-tendor, about 20 minutes more.

Change oven temperature to broil.� Sprinkle remaining cheese over potatoes.� Broil 6 inches from heating element until the cheese is golden brown, about 1 to 2 minutes.� Allow to cool for 5 minute and slice into 8 pcs.

**Notes - I added all the cheese at once and elimated the last paragraph just for timing purpose with my other stuff.
