    1/2 cup onion -- chopped
    1 cup mushrooms -- chopped
    1 clove garlic -- crushed
    2 teaspoons reduced-calorie margarine
    10 ounces frozen spinach -- chopped
    1 cup egg beaters� 99% egg substitute
    1 cup 1% low-fat milk
    1 tablespoon all-purpose flour
    1 teaspoon dried basil
    1 teaspoon Tabasco sauce -- optional
    4 teaspoons nonfat parmesan cheese
    Pepper -- to taste

    Saut� first 3 ingredients, in the margarine, until soft. Allow spinach to thaw, squeeze moisture out of spinach, add to saut�ed mix. Put in 9" pie pan.

    Mix remaining ingredients and pour over spinach. Bake 350 degrees for about 45 minutes, or until knife inserted in center comes out clean.
