    Orange-Spice Mashed Sweet Potatoes

    List of Ingredients




    3 pounds sweet potatoes
    1/3 cup fresh orange juice
    1/4 teaspoon ground nutmeg
    1/4 teaspoon ground ginger
    Vegetable cooking spray
    1/2 cup chopped pecans
    1/2 cup firmly packed brown sugar
    1 teaspoon grated orange rind
    1 teaspoon ground cinnamon
    Garnish:
    Mandarin Orange Peeled Segments
    Whole Pecan Halves

    Recipe



    1. Bake potatoes at 400 F degrees for 1 hour or until tender; peel. Reduce oven temperature to 350 F degrees.
    2. Beat potatoes, orange juice, nutmeg and ginger in a large mixing bowl at medium speed with an electric mixer until smooth. Spoon mixture into a 13 x 9 inch baking dish coated with cooking spray.
    3. Combine chopped pecans and remaining 3 ingrediants; sprinkle evenly over potato mixture.
    4. Garnish with Orange segments and Pecan halves.
    5. Bake at 350 F degrees for 20 minutes or until thoroughly heated.

    Serves 8
