    Caesar Salad

    List of Ingredients

    2 anchovy fillets
    3 whole garlic cloves, peeled
    3 Tablespoons mayonnaise
    2 Tablespoons white wine vinegar
    1/8 teaspoon black pepper, freshly grated
    2 Tablespoons virgin olive oil
    2 hearts of romaine lettuce
    2 Roma tomatoes, seeded and diced
    2 Tablespoons freshly grated Pecorino Romano cheese (2nd choice substitute: Parmigiano Reggiano)
    Garlic Herb Croutons

    Recipe

    1. Process the anchovy fillets, garlic, mayonnaise, vinegar, salt and pepper in a little "one-cup" food processor or a blender to smooth consistency. Add the oil slowly, to form a dressing which will be slightly thickened and creamy.
    2. Remove and discard the two outer layers from the head of romaine. Cut the two hearts of romaine crosswise into 2-inch pieces.
    3. In a large bowl, toss the romaine leaves with the dressing until well coated.
    4. Divide the leaves on four serving dishes and top with the diced tomatoes and grated cheese.

    Serves: 4

    Note: Serve with Garlic Herb Croutons (see my recipe)

    Note2: I love my little food processor for little things.
