Leeks with Cheese and Ham

List of Ingredients
� 8 medium leeks, trimmed and cleaned and boiled until tender
� 8 slices good quality wafer thin sliced ham
� A little extra grated cheese for topping
For the cheese sauce -
� 25g (1oz) butter
� 25g (1oz) flour
� 250ml (8floz) milk
� 1 tsp Dijon mustard
� Salt and freshly ground black pepper
� 25g (1oz) grated Parmesan, Gruyere, or CheddarRecipe
For the cheese sauce -
� Pre-heat the oven to 190�C/ Gas mark 5.
� Melt the butter in a small pan.
� Add the flour and beat well with a wooden spoon.
� Gradually pour on a little of the milk, beating all the time with the wooden spoon until the milk is incorporated and the sauce is smooth and thickened.
� Pour on a little more milk, beat until smooth and continue until all the milk has been added.
� If the sauce is a little lumpy, use a small whisk to beat out the lumps.
� Stir in a good shake of salt and pepper and add the mustard.
� Lastly add the cheese and stir until melted.
To assemble -
� Dry the leeks on a cloth.
� Wrap a slice of ham around each and lay them in a shallow baking dish.
� Pour over the cheese sauce and sprinkle with cheese.
� Bake for 30 mins until golden and tender.
