    Juicy Pork Chops

    1.�� Buy a pork chop at least 1" thick. I prefer boneless loin chops but any will do.
    2.�� Preheat your oven to 450F.
    3.�� Salt, pepper and garlic powder your chops to taste.
    4.�� Preheat an�oven proof skillet (cast iron) until smoking hot. Add 2 parts Canola oil to 1 part unsalted butter� (2 T, 1 T)
    5.�� Sear the Chops until they are well browned (2-3 minutes).
    6.�� Transfer pan to oven and cook an additional 5 minutes.
    7.�� The chops should be slightly pink inside nice and brown on the outside and definitely moist.

    For a sauce: Saute 3/4 # fresh mushrooms in the butter-oil mixture until they give off all of their liquid and start to brown. Remove mushrooms from pan. Pour 1/2 C heavy cream and 2 oz white wine (Chardonnay) into pan and bring to a boil. Lower heat to a simmer and cook until it reduces to approx 1/2. Thicken with cornstarch/water if necessary.
    Return mushrooms to pan, season with salt and freshly ground pepper, bring back to a boil and serve over the chops.
