    As a holiday gift for a couple, place some of these biscotti's in a plastic bag and tie with a ribbon. Into a basket which has been decorated with fabric, ribbon and garland place the package of biscotti, 2 nice cups and a gift tag. They are sure to enjoy your thoughtfulness.

    List of Ingredients

    1/2 c butter, softened
    1 c sugar
    2 eggs
    3 tbls amaretto
    1/2 t almond extract
    2 1/4 c all purpose flour
    1/4 c cocoa (powdered cocoa, not a drink mix)
    1 t baking powder
    1/2 t baking soda
    1/4 t salt
    1 c sliced almonds, toasted


    Preheat overn to 375 F. Grease and flour a baking sheet.
    In a large bowl, cream butter and sugar until fluffy. Add eggs, amaretto, and almond extract; beat until smooth. In a medium bowl, combine flour, cocoa, baking powder, baking soda, and salt. Add dry ingredients to creamed mixture; stir until a soft dough forms. Stir in almonds. Divid dough into thirds. Allow about 3 inches between each piece of dough on baking sheet. Shape each of the pieces of dough into a log shape about 2"x9", flowering hands as needed to prevent sticking. Bake 20-24 minutes or until loaves are firm. Cool 10 minutes on baking sheet. Cut loaves diagonally into 1/2" slices. Lay slices flat on an ungreased baking sheet. Bake 6 minutes; turn slices over and bake an additional 6 minutes. Transfer cookies to wire cooling rack. When cool, store in a cookie tin. Yield: about 4 doz. cookies.
