    Italian Sausage & Tortellini Soup

    Recipe Introduction

    Double it, Triple it, but don't overlook it. A pot of this soup along with a green salad and some garlic bread is a real crowd pleaser.

    List of Ingredients

    1 - 1 1/2 lb. Italian sausage
    1 c. chopped onion
    2 cloves garlic, pressed
    5 c. beef broth
    1/2 c. water
    1/2 c. dry red wine (optional)
    8 oz. fresh or frozen tortellini
    1 c. sliced carrots
    1 can (about 14-16 oz) stewed tomatoes
    1/2 tsp. dried basil
    1/2 tsp. dried oregano
    8 oz. tomato sauce
    1 1/2 c. sliced zucchini
    2 green bell peppers, seeded and cubed
    3 tblsp. chopped fresh parsley
    fresh grated parmesan cheese (not the kind in the can)

    Recipe

    1 Remove casings from sausage. Brown sausage and cook until crumbly. Remove meat from pot. Reserve 1 tablespoon drippings.
    2 Cook onion and garlic in the drippings until tender. Add broth, water, wine, carrots, tomatoes, basil, oregano, tomato sauce, and the cooked sausage. Bring to a boil; reduce heat and simmer uncovered 30 minutes.
    3 Add zucchini, green peppers, parsley, and tortellini. Simmer until tortellini is tender. Garnish each serving with fresh grated parmesan cheese.
