    Southern Pecan Rice

    This is a wonderful combination and leans toward "Cajun" style rice.

    6 to 8 servings

    List of Ingredients




    1 stick butter or margarine (we used butter)
    1 cup onion, chopped
    1/3 cup red bell pepper, cut in thin stripes (we did bite size)
    1/3 cup green bell pepper, cut in stripes
    1/3 cup yellow bell pepper, cut in stripes
    2 tablespoons minced garlic
    2 tablespoons chopped parsley, fresh is best (we used dried)
    2 tablespoons chopped fresh basil or 1 tablespoon ground basil (we used dried)
    1 teaspoon salt
    1/2 teaspoon black pepper
    6 drops Louisiana hot sauce (we used more)
    1 cup pecan halves
    3 cups cooked rice (I prefer brown or wild rice and plan to try them in combination)
    1/4 cup chopped green onions, for garnish



    Recipe



    In medium- size saucepan, heat butter on high until melted. Add onion, bell peppers, garlic, parsley and basil, saut�ing until onion starts browning. Add salt, pepper, hot sauce and pecans, stirring well. Saut� on high another 5 minutes, stirring often. Add rice, stirring well, until well blended. Remove from heat, place in serving bowl and sprinkle top with green onions to garnish.

    Noe: We added soy sauce and garlic salt. Hope you enjoy!
