    German Potato Salad

    List of Ingredients

    6 med potatoes about 2# unpeeled,
    6 slices of bacon cut into 1/2inch pieces
    1/2 c chopped onion,
    2 tsp sugar,
    1 1/2 tsp salt,
    1 tsp flour,
    1/8 tsp pepper,
    3 tbls red wine vinegar,
    parsley to garnsh


    Cooking instructions - Peeling the potatoes is optional, I like to leave the skins on!
    -Cut potatoes into bite size pieces and place in cooking pan. Cover with cold water, bring to a boil and cook until tender but not too soft.
    -While potatos are cooking - cook the bacon until crisp drain and keep some of the grease cook the onion.
    -Cook the onion until tender (slightly browned) in the bacon grease (about 2 Tbsp),
    -Add sugar, salt, flour and pepper to the pan while stirring. Stir until well blended
    -Gradually add red wine vinegar and 1/2c water. Cook stirring the mixture until slightly thickened; stir in bacon and drained potatoes and heat through - transfer to a bowl and garnish (serve warm or cooled)
