    Asparagus Crisp Sticks

    Recipe Introduction


    This was always a winner at dinner parties. Frequently when I issued invitations, especially in the spring, I would be asked If it was going to be on the menu.


    List of Ingredients


    • 20 fresh asparagus spears
    • 1/2 cup water
    • 1 egg
    • 2 tablespoons water
    • 1 clove garlic, minced
    • 1 sleeve salted crackers
    • oil for frying


    Instructions


    1. Place asparagus, 1/2 cup water in non reactive skillet.Cover and heat to boiling;lower heat, cook for 5 minutes, drain.

    2. Beat egg with 2 tablespoons water, and garlic

    3. Crush crackers into fine crumbs

    4. Dip asparagus in egg mixture, then into crumbs

    5. Set aside to dry a little

    6. Redip to coat well

    7. Use shallow skillet with hot oil sufficient to cover spears. Fry to golden brown.

    8. Drain on paper towels, serve hot.
