    3 cup sweet potatoes, cooked and mashed
    1/3 cup dry sherry
    1 1/2 cup half and half
    6 tbsp. butter, melted
    3 tsp. orange zest
    1 tsp. salt
    1/4 tsp. white pepper
    1/4 tsp. nutmeg
    1/4 tsp. cinnamon
    2 tbsp. brown sugar
    6 eggs, separated

    Preheat oven to 375�F.

    Butter a 2 quart souffl� dish or 6 individual souffl� dishes. Prepare a Bain Marie by placing the buttered cup(s) in a baking dish, then filling the dish 3/4 the way up the sides of the cups, with warm water. Baking the souffl�s this way helps them to rise and cook evenly. (see photo)

    In a large mixing bowl, combine all ingreadients except eggs and beat until smooth. Beat in egg yolks. Set aside.

    In a separate large bowl, beat egg whites until stiff, but still moist. Gently fold egg whites into the sweet potato mixture and pour into souffl� dish(es). Bake for about 45 minutes or until light golden brown on top. Serve immediately.
