    Cheese Filled Butter Cookies

    List of Ingredients

    2 cups butter, softened
    1/2 cup granulated sugar
    1 teaspoon vanilla
    4 cups all-purpose flour
    2 tablespoons milk
    3/4 cup dry-curd cottage cheese
    1 3-ounce package cream cheese, softened
    1 egg yolk
    1/2 teaspoon vanilla
    1/2 cup sifted powdered sugar
    Icing or sifted powdered sugar (optional)

    Recipe

    In a large mixing bow, beat butter with an electric mixer on medium to high speed for 30 seconds. Beat in granulated sugar and the 1 teaspoon vanilla. Beat in about half of the flour and the milk. Beat or stir in remaining flour. Cover dough and set aside.

    For filling, in a mixing bowl, beat together cottage cheese, cream cheese, egg yolk and the 1/2 teaspoon vanilla. Beat in the 1/2 cup powdered sugar until well mixed (filling will not be completely smooth).
    Shape dough into 1-inch balls and place 2 inches apart on ungreased cookie sheets. Using your thumb make an indentation in the center of each cookie. Spoon abut 1/2 teaspoon of the filling into each indentation.
    Bake in a 325� oven for 18 to 20 minutes or until edges are firm (cookies should not brown). Transfer to wire racks, let cool.

    If desired, drizzle cookies with Icing or sprinkle with additional powdered sugar. Store cookies, covered in the refrigerator for up to 3 days. (Or do not frost or sprinkle and freeze in containers for up to 3 months. Frost or sprinkle before serving. Makes about 84 cookies.

    Icing: stir together 1 cup sifted powdered sugar and 1 tablespoon milk. Add additional milk, if necessary to make of drizzling consistency.
