    Apple Cheddar Scones

    Source of Recipe

    unknown

    Recipe Introduction

By replacing the butter called for in the original recipe with light margarine, and using fat-free cheddar cheese, the fat grams were cut from 9g to 3g, and the cholesterol from 26mg to 2mg!

    List of Ingredients

    3 cups flour
    1/4 cup Splenda
    2 teaspoons sugar
    1 teaspoon baking soda
    3/4 teaspoon salt
    1/4 teaspoon nutmeg
6 tablespoons cold, light margarine -- cut up
    1 cup buttermilk
1 apple -- peeled and diced (1 cup)
    4 ounces fat-free cheddar cheese
1 egg white -- lightly beaten

    Recipe

Heat oven to 400. Lightly coat a large baking sheet with nonstick cooking spray.

Combine flour, Splenda, baking powder, baking soda, salt and nutmeg in a large bowl. Add margarine; cut in with pastry blender or two knives until mixture resembles coarse crumbs. With a fork, stir in buttermilk, apple and cheddar pieces just until mixture forms a dough.

Turn dough out onto floured surface. Knead 6 or 7 times. Divide dough in half and gather each into a ball. Pat each portion into a 6 - 7-inch circle; place on coated baking sheet. Using sharp knife coated with nonstick cooking spray, cut each round into 6 equal wedges. Brush with egg white; sprinkle with remaining 2 teaspoons of sugar.

Bake in 400 oven for 20 to 25 minutes or until golden brown and no longer soft in the center. With a serrated knife, cut through earlier wedge marks. Remove to rack to cool.

Serve warm or at room temperature.
