    Brining makes this chicken really stand out. This dish is guaranteed to impress your family and friends.

    List of Ingredients




    7 Cups Water
    2 Tablespoons Black Pepper
    6 Fresh Thyme Sprigs
    1/2 Cup Kosher Salt
    1/2 Cup Honey
    1/4 Cup Firmly Packed Brown Sugar
    6 To 7 Pound Whole Chicken
    2 Cups Ice Cubes
    1 Tablespoon Olive Oil
    1 Tablespoon Chopped Fresh Thyme
    1 Tablespoon Black Pepper
    Garnishes: Apple Slices, Swiss Chard, Fresh Sage Leaves

    Stir together 1 cup water, 2 tablespoons pepper, and thyme sprigs in a large saucepan over medium-high heat. Bring to a boil; remove pan from heat, and let cool to room temperature. Add salt, honey, brown sugar, and remaining 6 cups water to pan, and stir until salt and sugar dissolve. Pour salt mixture (brine) into a 2-gallon zip-top plastic freezer bag. Add chicken and ice; seal. Refrigerate 24 hours, turning bag occasionally. Remove chicken from bag, and discard brine. Pat chicken dry with paper towels. Rub chicken evenly with oil. Combine chopped thyme and 1 tablespoon pepper; rub over chicken, and place in a lightly greased roasting pan. Bake at 400 degrees for 1-1/2 to 1-3/4 hours or until a meat thermometer inserted into thickest portion of thigh registers 180 degrees, shielding with aluminum foil to prevent excessive browning. Place chicken on a platter. Cover with foil; let stand 15 minutes before slicing. Garnish if desired. Makes 6 to 8 servings.
