    This is a great lite dish to serve on a warm summer night when you want out of the kitchen in a hurry.

    List of Ingredients




    4 Boneless, Skinless Chicken Breast Halves
    1 1/2 Cups Chopped Onions
    1 1/2 Cups Chopped Red, Yellow And/Or Green Sweet Peppers
    2 Cups Spaghetti Or Pasta Sauce
    4 Cups Cooked Angel Hair Pasta
    1/2 Cup Finely Shredded Parmesan Cheese

    Recipe



    Coat a large nonstick skillet with nonstick cooking spray. Add chicken breasts and cook over medium-high heat for 8 to 10 minutes or until tender and no longer pink (170 degrees), turning once. Remove chicken. Add onions and peppers to skillet. Cook and stir for about 5 minutes or until tender. Shred chicken breasts and add to vegetable mixture. Add spaghetti/pasta sauce and bring to a boil. Cover and simmer over low heat for 8 minutes. Serve over angel hair pasta. Sprinkle with Parmesan cheese. Serves 6.
