    Roasted Tomato Sauce

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    4 pounds Roma tomatoes -- or very red summer tomatoes
    1 pound sweet onions
    5 large cloves garlic -- or more
    1 teaspoon salt -- optional
    3 tablespoons coarsely chopped fresh basil
    2 tablespoons balsamic vinegar
    2 tablespoons olive oil

    Peel tomatoes. Cut into large chunks over a bowl to catch the juice.

    Peel and chop onions.

    Peel and slice garlic.

    Toss all ingredients and spread over a large baking sheet with sides. Roast at 375F for 2 - 2/12 hours, stirring occasionally. Most of the liquid will cook down, making a soft, thick, caramelized sauce. Blend for a smooth sauce if desired.

    Serve on pasta, rice, pizza, polenta, in soups, quesadillas, omelets....etc.
