    2 large eggs well beaten
    2 TBs. salt
    2 cups uncooked elbow or short macaroni
    � cup soft butter
    2-2� cups evaporated milk
    1� lbs. extra sharp cheddar cheese, grated
    paprika
    cayene pepper (optional)

    Recipe



    Bring a large pot of water to a full rolling boil. Add the salt;Then add macaroni slowly so the water doesn't stop boiling.Boil for 12 minutes.stirring often. Do NOT over cook.and do not stop stirring.Meanwhile preheat your oven to 350�.After 12 minutes drain macaroni rinse with a little cold water quickly stir in the butter.Pour the beaten eggs into the evaporated milk.

    put a layer of macaroni into a buttered 2 qt. casserole, then use a layer of cheese, then a layer of macaroni,another layer of cheese, continue until you use all ending with cheese on top.Pour the milk and egg mixtureover all, forking it through evenly, and top with a healthy sprinkling of paprika.Bake in oven uncovered for 45 minutes or until brown and bubbilicious!
