Onion Garlic Soup

When I made this in January 2022, I found it a little overly greasy. Next time I'll try less butter.
Serve with plenty of bread to sop up the soup. I also make this as just regular onion soup - without the egg and cream and just putting a cheese crouton on top.
List of Ingredients
1/2 c. butter [SEE NOTE ABOVE]
2 lb. sweet onions - finely chopped
4 garlic cloves - minced
1 bulb of garlic, roasted
1 t. flour
1/2 t. dried thyme or 1 t. fresh
salt and pepper
2 c. Chablis
2 c. chicken consomm� + 2 c. beef broth
4 eggs
6 oz. grated gruyere cheese
4 T. whipping cream
Recipe
Melt butter in a pan that can go from stove top to oven. Saut� onions very slowly over medium low heat until caramelized. Add the 4 minced garlic cloves and continue to cook on medium-low until fragrant. Add flour and brown. Blend in thyme, salt and pepper. Add wine. Add roasted garlic. Simmer 30 minutes.
Meanwhile heat oven to 350F.
Add consomm� and beef broth and bring to a boil. Place the pan in the oven and bake for 2 hours. Ladle soup into oven proof bowls. Add one lightly beaten egg to each bowl. Sprinkle with cheese. Bake 10 minutes. Top with 1 T. whipping cream each.
Serves 3-4.
