    Recipe Introduction


    This is one of our favorite soups. It really is quick. You can jazz it up by adding tortellini (really good) and freshly grated Parmesan. But it's also great all buy itself with a grilled cheese sandwich.


    List of Ingredients


    • 1 - 10 oz. can undiluted beef consomme
    • 1 c. water
    • 2 c. tomato juice
    • 1 bay leaf
    • 1 rib celery
    • 3 slices sweet white onion
    • 3 sprigs parsley
    • salt to taste
    • chopped fresh parsley for garnish
    • 4 thin lemon slices for garnish


    Instructions


    1. Combine all ingredients except the garnish in a saucepan. Bring to a boil, reduce the heat, and simmer for 15-18 minutes. Strain. Serve with a sprinkling of parsley and a slice of lemon.
