    My rendition of an unknown source recipe


    Recipe Introduction


    I don't eat squash (neither does my daughter - we call it 'squish'), but everyone who does loves this.


    List of Ingredients


    • 2 lb. yellow squash - sliced thin
    • 2 medium onions - cut fine
    • 1/2 stick butter
    • 2 eggs - separated
    • 1/4 c. fine cracker crumbs - Chicken in a Biscuit
    • 1/2 c. cream
    • salt and pepper to taste
    • sugar
    • a couple of gratings of nutmeg
    • buttered crumbs
    • paprika


    Instructions


    1. Cook squash, onions and butter in a very small amount of water until tender and water is cooked out. Cream thoroughly. Add well beaten yolks, 1/4 c. crumbs, cream, nutmeg, salt, pepper and a small amount of sugar, to taste. Mix well. Folk in stiffly beaten egg whites. pour into a greased casserole and top with buttered crumbs. Sprinkle with paprika. Bake in 400 degree oven for 20 minutes.


    Final Comments
