    Almond Joy Balls

    Recipe Introduction

    Tastes like the real thing, only bite sized.

    List of Ingredients

    24 oz. sweetened shredded coconut (3 cups)
    14 oz. sweetened condensed milk (1 - 300ml can Eagle Brand))
    2 cups powdered sugar
    1 tsp. Vanilla
    1 tsp. Almond Extract
    2 cups Almonds (loose chopped)
    24 oz. milk chocolate chips (melted)

    Recipe

    Method:
    Combine Coconut, Sweetened Condensed Milk,Icing Sugar, Vanilla, Almond Extract, and Almonds. Mix until well blended.Scoop enough of the mixture to roll into 3/4 to 1 inch balls. Place on a cookie sheet and cool.
    Melt Chocolate chips in a bowl in Microwave, or over simmering water. Thin with a little milk or water, if too thick. I used a mixture of Dark and Milk Chocolate Chips...it's what I had.
    Using 2 forks, drop balls into chocolate mixture, transferring bac and forth, too remove excess chocolate. Place completed balls on a cookie sheet, keeping separate.
    Cool in freezer, or garage...whatever is colder, and has more room.
