    Ching Tao Ha Jan-(shrimp and peas)

    List of Ingredients

    2 lb. shrimp
    3 T oil
    3 scallion, diced
    1 inch piece of ginger, chopped fine
    2 cloves garlic, minced
    2 C fresh peas
    1 tsp cornstarch
    1 tsp of salt
    1 tsp sugar
    1 tsp sherry or rice wine
    1 tsp soy sauce
    3 T cold water.


    Recipe

    Clean and shell shrimp. Remove black veins from shrimp. Wash in salted water. Drain.
    Heat 3 tbsp. oil in another pan. Saute shrimp until color changes. Remove from pan. Add onion, ginger, garlic, and peas to fry pan.
    Combine cornstarch, salt, sugar, and sherry in a cup or bowl. Add soy sauce and water, mix to a smooth paste. Pour into fry pan and add shrimp. Stir constantly to a boil. remove from heat and serve hot.
