    List of Ingredients


    • 6 egg whites
    • 1/3 C plus 1 T sugar
    • 1 3/4 C almond meal
    • 2 1/3 C powdered sugar, sifted
    • 6 T chilled butter
    • 1/2 C almond paste
    • 1/4 C jam


    Instructions


    1. Whisk egg whites until they start to turn white, and add the sugar. Whisk until they leave a ribbon pattern on surface when whisk is lifted.

    2. Combine powdered sugar and almond meal and fold into meringue . Place into a pastry bag with wide round tip. Pipe small round the size of a quarter onto cookie sheet lined with parchment paper. Bake 10-12 minutes or until set but not browned. Repeat until all is used up. Cool.

    3. Filling: Combine chilled butter and almond paste until smooth. Stir in jam and sandwich two cookies together.
