    Barley Bowl, Japanese Style

    List of Ingredients


    • 1 1/2 C hulled barley
    • 3-4 C water
    • 1/2 tsp salt
    • 2 T rice vinegar
    • 2 tsp sugar
    • 8 oz snow peas, steamed
    • 1 medium carrot, julienned
    • 12 oz cooked shrimp
    • 4 sheets nori, sliced
    • 1/2 C pickled ginger slices
    • 2 T prepared wasabi
    • shoyu


    Instructions


    1. Bring water, barley and salt to a boil. Cook covered, 40-50 minutes. Drain excess water and return barley to pan for 10 minutes., covered. Then scrape out into a large bowl. Cover with a wet towel to keep moist as it cools.

    2. Mix vinegar and sugar and fold into barley. Drop vegetables in boiling water until crisp tender. Remove and cool.

    3. To serve, divide barley between 4 wide bowls and level evenly. Garnish attractively with vegetables. Place shrimp on top. Place some pickled ginger slices on one side. Sliver nori with scissors and sprinkle over. On the side serve wasabi, ginger and shoyu.
