    List of Ingredients


    • 1 C brown rice
    • 3 C water
    • 1 C celery,in 1/2 inch slices
    • 1 bunch scallions,in 1 inch pieces
    • 1 green and 1 red bell pepper, cut in rings
    • 1 4-ounce can mushrooms, reserve liquid (or 1/4 pound fresh)
    • 1/4 C spinach
    • 1 C bean sprouts
    • 1 can thinly sliced gluten, or nutmeat preparation
    • 4 T soy sauce
    • 2 T oil
    • 2 C water, broth or vegetable juice
    • 2 T arrowroot


    Instructions


    1. Place rice in dry skillet as for pilaf with a little oil, stir and shake the pan over medium high heat until parched tan but not browned. Add water and salt immediately. Place a tight fitting lid on pan and cook on low heat until light and fluffy.
    2. Prepare the vegetables and cook 10-12 minutes. They should remain crisp.(almost any vegetables can be used)Serve on rice with sauce.
    3. Brown gluten in fat, add soy sauce and water, combined with arrowroot. Cook until thickened.


    Final Comments


    You can use tofu in place of gluten.
