1 medium onion, sliced
1 medium red bell pepper in 2 inch strips
3 Portabella mushrooms, halved
salt
pepper
1/3 C mayonnaise
1 tsp dried dill
large loaf Italian bread
1 T olive oilRecipe
Heat oil in a large skillet, add onions and top with the bell pepper strips. cover skillet and cook over medium-medium high heat for 5 minutes. Remove from heat. Remove lid. Add mayonnaise and dill. season with salt and pepper. stir.
Split the bread in half horizontally. Spread bottom half with the filling in pan.
Saute the portabellas in fry pan until tender. Top the filling with the mushrooms. Place top half of bread back on loaf. and cut into 6 serving pieces.
