    Zucchini Noodles

    List of Ingredients




    1 1/2 pounds green zucchini or any summer squash
    1/4 C (or more)basil pesto
    1/4 C olive oil
    1 T fresh lemon juice
    1 tsp sea salt
    2 T roasted, chopped almonds
    1 T sun dried tomatoes (oil packed) drained and julienned
    freshly ground black pepper
    Fresh Italian flat leaf parsley and basil for garnish

    Recipe



    Using a sharp knife or slicing tool such as a Japanese Benriner-brand slicer, cut long, thin "noodles" from the squash. (or slice thin rounds or use a potato peeler for thin ribbons.
    Combine noodles with pesto, olive oil, lemon juice, salt, almonds, sun dried tomatoes and pepper to taste. Toss well to combine. Serve immediately or chill. Garnish with parsley.
