    Pumpkin Spice Muffins

    Recipe Introduction


    These are moist and spicy with a lot of pumpkin flavor. These are also great as mini muffins. Bake about 18-20 minutes.

    List of Ingredients




    1/4 cup butter -- softened
    1/2 cup granulated sugar
    1/2 cup brown sugar
    1/4 cup low fat sour cream
    1/4 cup milk
    1 (15 oz.) can pureed pumpkin
    1 egg
    1 tsp vanilla
    2 1/2 t. pumpkin pie spice
    1 cup all purpose flour
    1 cup whole wheat pastry flour
    1 tsp baking soda
    1/2 tsp salt
    Hershey's cinnamon chips, to taste

    Recipe



    1) Preheat over to 350 degrees.

    2) Cream butter and sugars. Add the sour cream and next 7 ingredients (milk through cinnamon) beat well.

    3) Stir together flours, baking soda, salt, and cinnamon chips in a small bowl. Add to wet mixture and stir until combined. Don't over-mix.

    4) Pour batter into muffin tin sprayed with cooking spray. Bake until a toothpick tests clean - about 28-30 minutes.


    NOTES : I made a double batch for Kyle's preschool party. They turned out very moist and yummy!
