    List of Ingredients




    1/2 cup water (3/4 cup)
    2/3 cup buttermilk (3/4 cup)
    1 1/2 T. olive oil or butter (2 T.)
    1 1/2 T. honey (2 T.)
    2 1/2 cups bread flour (3 cups)
    1/3 cup instant potato flakes (1/2 cup)
    1 T. vital wheat gluten (1 T. plus 1 t.)
    1 1/4 t. salt (1 1/2 t.)
    1 3/4 t. SAF yeast OR 2 1/4 t. bread machine yeast
    (2 t. saf OR 2 1/2 t. bmy)

    Recipe



    Place ingredients in pan according to the order in the manufacturer's instructions. (NOTE: Be sure to add the flour first, to the liquid already in pan, and then the potato flakes. Otherwise, as you are measuring the flour, the potatoes will already be soaking up the liquid, and the result will be a dry dough ball.)

    NOTES : The first measurements are for a 1 1/2 lb. loaf and the second measurements are for a 2 lb. loaf. The recipe calls for dark honey, but I just use regular ol' honey. I use the dough cycle and bake it in the oven. For the 1 1/2 lb. loaf, I use an 8 inch loaf pan and for the 2 lb. loaf, I use a 9 inch loaf pan. I've also made (knot) rolls with this dough. After they come out of the oven, I brush them with about a T. melted butter mixed with a T. or so of honey.

    Author's note: If you have a Welbilt machine, please note that it usually requires an additional 2 T. liquid in every recipe in this book
