    ABM Orange Cinnamon Bread

    This makes wonderful cinnamon toast and bet it would make great French toast!

    List of Ingredients




    Dough:
    1/2 cup orange juice
    1/3 cup milk
    1 large egg
    3 T. unsalted butter -- cut into pieces
    3 cups bread flour
    1/4 cup sugar
    grated zest of one orange
    1 T. vital wheat gluten
    2 t. ground cinnamon
    1 1/4 t. salt
    2 t. SAF yeast or 2 1/2 t. bread machine yeast

    Vanilla Orange Glaze: (optional)
    3/4 cup sifted confectioners sugar
    1 1/2 T. orange juice
    1 t. pure vanilla extract

    Recipe



    Place all dough ingredients in bread machine pan according to the order in the manufacturer's instructions.

    Set crust on medium and program for basic cycle; press start.

    When baking cycle ends, immediately remove the bread from the pan and place on a rack. Place a plate or piece of waxed paper under rack.

    To prepare the glaze, combine the confectioners sugar, orange juice, and vanilla in small bowl; beat with a small whisk or fork until smooth. With a large spoon, drizzle the bread with the glaze, letting it drip down the sides. Cool to room temp. to set the glaze before slicing.

    Yield:
    "1 1/2 pound loaf"

    NOTES : I had all of my ingredients at about room temp. I set it on the dough setting and when it was done I punched it down. Then I let it rest for 5 or 10 minutes and shaped it and let it rise in a 9x5 Pyrex pan for about an hour. I baked it at 375 degrees for about 35 minutes. I checked it at 30 minutes and it was very brown on the top so I tented it with foil. Next time I will tent it sooner OR use these baking instructions I found with another recipe--Bake at 375 for 10 minutes then reduce heat to 325 degrees and bake for 30 minutes more, or until the loaves are nicely browned and test done when tapped on the bottom with a forefinger OR maybe just lower the temp. to 350. The sound will be hard and hollow.
