    List of Ingredients


    • 2-1/2 lbs. pork spare ribs
    • sea salt
    • black pepper, coarsely ground
    • 3/4 cup olive oil
    • 3/4 cup fresh lime juice
    • 1/3 cup Tequila
    • 1/4 cup onion, chopped
    • 2 tsp. garlic, minced
    • 1 small jalapeno, seeded and chopped
    • salt and pepper, to taste


    Instructions


    1. Wash and pat dry ribs. Place in a glass baking dish and season with salt and pepper.
    2. In a small bowl, place olive oil, lime juice, tequila, onion, garlic, jalapeno, sea salt and coarse pepper. Mix well. Reserve 1/4 of the mixture for basting. Pour remainder over ribs, coating all sides. Cover and refrigerate 6-8 hours.
    3. Preheat grill to low. Place ribs, meat side down on gril and cook, basting every 20 minutes. Cook for 1-1/2 to 2 hours or until cooked throughout and ribs are tender.
