    Coffee Cake

    This recipe is from Mom. It is just like a bakery coffee cake. It has a thick topping. It is also very moist and makes a large cake. Make the crumb topping in advance. It needs to be refrigerated for a day or frozen for 2 hrs.


    List of Ingredients


    • ********CRUMB TOPPING**********
    • 3 Sticks Margarine
    • 2 1/4 Cups Sugar
    • 3 Cups Flour
    • 1 1/2 tsp Cinnamon
    • ********CAKE*******
    • 1 stick margarine
    • 8 oz cream cheese
    • 1 1/4 cups sugar
    • 2 eggs
    • 1 tsp vanilla
    • 2 Cups flour
    • 1 tsp Baking powder
    • 1/2 tsp Baking Soda
    • 1/4 tsp Salt
    • 1/4 Cup milk (Goes in last)


    Instructions


    1. MAKE CRUMB TOPPING-- Put into refrigerator overnight or in the freezer for 2 hrs before making the cake. The cold helps the crumbs from "Sinking"
    2. Mix Topping Ingredients until well incorporated (should hold together) Refrigerate Overnight
    3. Preheat oven to 350. Grease and flour a 9 X 13 or larger pan
    4. Mix marg with cream cheese. Add sugar, mix well. Add eggs and vanilla Blend.
    5. Sift together the flour, B powder, B soda and salt.
      Add to the creamed mixture.
    6. Mix in milk. Mixture will be thick!
    7. Spread into the prepared pan.
    8. Take crumbs out of freezer and lightly crumble over the dough.
    9. Bake for about 40 minutes. Do the toothpick test!
