Burst o Lemon Muffins

List of Ingredients
1 � C all-purpose flour
� C sugar
1 tsp baking powder
� tsp baking soda
� tsp salt
1 C lemon or vanilla yogurt {8oz}
1 egg
1/3 C butter {margarine} melted
1~2 T grated lemon peel
1 T lemon juice�
� C flaked coconut
TOPPING:
1/3 C lemon juice
� C sugar
� C flaked coconut, toasted
Recipe
In lrg bowl, combine the flour, sugar, baking powder, baking soda n� salt. In another bowl, beat the yogurt, egg, butter, lemon peel n� juice til smooth; stir into dry ingredients just until moistened. Fold in coconut. Fill greased muffin cups 2/3�s full. Bake at 400� for 18~22 min�s or til golden brown n� muffins test done.
Cool for 5 min�s before removing from pan to a wire rack. In a saucepan, combine lemon juice and sugar; cook n� stir until sugar is dissolved. Stir in coconut. Using a toothpick, poke 6~8 holes in ea muffin. Spoon coconut mix over muffins. Serve warm or cool to room temp.
