Perfect White Bread

List of Ingredients
5� ~ 6� C all-purpose flour
1 pkg active dry yeast
2� C milk
2 T sugar
1 T shortening
2 tsp salt Recipe
In lrg mix bowl combine 2 � C flour & yeast {I generally sift these together into bowl, but that�s just me}.
In saucepan heat milk, sugar, shortening, n� salt just til warm {115~120�} stirrin constant til shortening ALMOST melts. Add to dry mix in mix bowl. Beat at low speed of mixer for � min {sometimes I go 1 min ~ depends on my mood! Ha!} scrapin sides of bowl constantly. Beat 3 min�s on high. BY HAND, stir in enough of the remaining flour to made a moderately stiff dough {the way I �gauge� is I add 1 C, stir in, then �dust� the dough with flour n� stir til it gets hard to stir anymore w/wooden spoon ~ usually bout 2 C total. Then I start w/the mitts�.dust turn til it forms a slightly sticky dough but pulls away from the sides forming a �kinda� ball} Turn out onto a lightly floured surface {I flour a lrg tea towel for this�parchment works too�.but call me old fashioned, I like my floured tea towels, so have returned to usin them! LOL!!} n� knead til smooth n� elastic ~ bout 8~10 min�s. Shape into a ball.
Place ball in lightly greased bowl, turn once to grease surface. Cover n� let rise in warm place til double bout 1 � hrs {this time is gonna vary dependin on room temp ~ just keep an eyeball on it} Punch dough down n� turn out on lightly floured surface. Divide in �.
Shape ea � into a smooth ball, cover n� let rest 10 min�s. Shape into loaves. Place in two greased loaf pans {when we moved only one of my loaf pans seemed to make it to the house so I�ve once again gone back to my old ways�.shape into loaves on place on greased, or parchment lined bake sheet} Cover n� let rise til double�bout 45~60 min�s. Bake in mod oven bout 375� {my oven I bake at 350�} bout 45 min�s or til done�when bottoms are thumped it will sound hallow} If tops brown too quickly, cover loosely w/foil last 15 min�s. Remove from pans; cool on wire racks.
