    I modified a recipe in Rocky River church cookbook

    List of Ingredients

    1/4 c. margarine
    1/3 c. flour
    1/4 c. mayonnaise
    1 3/4 c milk
    1/4 c. sherry
    6 egg yolks
    8 oz. sauteed fresh mushrooms
    1 small can chopped pimento
    1/2 t Worcestershire sauce
    4 English muffins, halved
    6 egg whites
    1/2 t cream of tartar
    Parmesan cheese


    In double boiler, stir margarine, flour and mayo. Add milk and sherry and cook until thickened. Add hot mixture slowly to well beaten egg yolks and cook 2 min. Stir in mushrooms and crab; add pimento and Worcestershire sauce. Place mixture over toasted English muffin halves.
    Beat egg whites with cream of tartar until peaks form. Place over crab mixture. Sprinkle with paprika and Parmesan cheese.
    Bake at 350 for 15-20 min. until golden brown.
    Yield: 8
