    Mimi's Cafe Carrot Bread


    1-1/2 cup all-purpose flour
    1 tsp. baking soda
    2 tsp. baking powder
    2 tsp. cinnamon
    1/2 tsp. salt
    1 cup oil
    1-1/2 cups brown sugar, packed
    3 eggs
    1/2 cup chopped nuts (walnuts or pecans)
    1/2 cup crushed pineapple, drained (8-oz. can)
    1/2 cup raisins
    1 cup finely shredded carrots

    Recipe




    Sift first five ingredients into a mixing bowl. (flour, baking soda, baking powder, cinnamon and salt)

    In a separate bowl, whisk together the oil, sugar and eggs.

    Stir the liquid mixture into the flour; mix well.

    Add the next four ingredients (nuts, pineapple, raisins and carrots).

    Grease and flour a 9" square pan or 4 mini-loaf pans. (Fill the pans 2/3 full with batter)

    Bake at 350 for about 40 minutes. (Mini loaves take about 30 minutes....


    NOTE: I found that it took longer).
