Chestnut Stuffing
1 chopped onion
� bunch of chopped celery (about 2 cups)
2 pounds of cooked pork sausage or bacon
1 bunch of fresh sage
Skin from a 12-pound pre-roasted turkey
1 gallon of turkey stock
� cup of whole garlic cloves
Meat from turkey bones
Salt and pepper to taste
1 loaf of fresh bread (cut into � " cubes)
1 bunch of fresh parsley
2 pounds of whole blanched chestnutsRecipe
Combine first nine ingredients at left in pan and boil for 30 minutes.
Adjust seasoning as desired.
Puree ingredients in grinder or mixer, add parsley.
Add to cubed bread in a mixing bowl.
Add chestnuts.
Mix together and place in a buttered roasting pan.
Bake for one hour at 350 degrees.
