    Raisin Cookies

    List of Ingredients


    • 1-2/3 cups flour
    • 1/2 tsp apple pie spice
    • 1/2 cup margarine, softened
    • 1/2 cup sugar
    • grated peel of 1 lemon
    • 1 egg
    • 1 tbsp milk
    • 1/2 cup raisins
    • Beaten egg white


    Instructions


    1. Preheat oven to 350F. Lightly grease cookie sheets.
    2. Sift flour and apple pie spice together. Set aside.
    3. Beat margarine, sugar and lemon peel together until light and fluffy.
    4. Beat in the egg. Blend in the milk. Work the raisins in with the flour. Mix all to a stiff dough.
    5. Turn out onto a lightly floured surface. Roll to 1/4 inch. Cut with a 3 inch fluted cookie cutter. Reroll and cut trimmings.
    6. Transfer to prepared sheets. Prick each cookie in several places with a fork. Brush tops lightly with beaten egg white. Sprinkle with sugar.
    7. Bake 15-20 minutes, until golden. Cool on baking sheets 1-2 minutes, then transfer to wire rack.
