2-1/2 pounds chicken pieces (boneless preferred)
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons vegetable oil
1 (21-ounce) can fruit pie filling
1/2 cup dry white wine
1/2 cup lime juice
1/4 cup packed light brown sugar
1/4 teaspoon allspice
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
Recipe
1. Rinse chicken and pat dry. Season with salt and pepper and brown on each side in a skillet in the oil for 10 minutes; drain.
2. Combine pie filling, wine, lime juice, brown sugar and spices in a bowl; mix well.
3. Arrange chicken in a microwave safe casserole; spoon fruit over the chicken. Cover and microwave on LOW setting for 20 minutes or until chicken is no longer pink and is fork tender.
