    1 (3-1/2 pound) chicken, skinned and cut into 8 pieces

    1 teaspoon freshly ground black pepper

    1 teaspoon dried marjoram

    1/2 teaspoon salt

    1 teaspoon margarine

    1 large yellow onion, thinly sliced (about 1-1/2 cups)

    2 medium Winesap or Granny Smith apples, thinly sliced

    1/2 cup sweet sherry or apple juice

    1/2 cup cider vinegar

    Recipe



    1. Preheat oven to 350 degrees F. Sprinkle chicken with pepper, marjoram and salt. In a large heavy skillet, melt margarine over medium heat. Add chicken and cook, turning once, until browned, about 6 minutes.

    2. Place chicken in a large baking dish. Place onions and apples over chicken.

    3. In a small bowl, combine sherry and vinegar. Mix well. Pour sherry mixture over chicken.

    4. Bake chicken, basting and turning occasionally, until chicken is cooked through and no longer pink, about 1 hour. Serve immediately.
