    CR�ME DE MENTHE JELLY

    • 1 cup firmly packed, washed, and drained mint leaves
    • 1-1/2 cups water
    • 1/3 cup green cr�me de menthe
    • 2 Tbsp. fresh lemon juice
    • 3-1/4 cups sugar
    • 1/2 bottle Certo


    Instructions


    1. Whiz water and mint leaves together in a blender until finely chopped. Pour into a saucepan and bring to a boil. Remove from heat and cover. Let steep for 10 minutes. Add cr�me de menthe and strain through cheesecloth. Measure; add more cr�me de menthe to make 1 � cups of liquid, if necessary. Pour the liquid into a large saucepan and add lemon juice and sugar. Bring to a rolling boil, stirring constantly, then at once stir in the pectin. Bring again to a boil and boil for 1 minute, stirring constantly. Skim and pour quickly into sterilized jars and seal with melted paraffin.
