    Impossible Ham Pie

    List of Ingredients

    4 cups cut up, fully cooked smoked ham
    2-4 oz cans mushrooms stems and pieces, drained
    2 oz jar diced pimentos, drained
    2/3 cup sliced green onions, with tops
    2 cups shredded natural swiss cheese
    3 cups milk
    1 1/2 cups buttermilk baking mix (Bisquick)
    6 eggs

    Recipe

    Divide ham, mushrooms, pimentos, onions and cheese between 2 lightly greased 1x1 1/2 inch pie plates.
    Cover and refrigerate no longer than 24 hours.
    Beat remaining ingredients with hand mixer until smooth.
    Divide mixture between pie plates.
    Bake in a 400 degree oven until golden brown and knife inserted halfway between center and edge comes out clean, 30 to 35 minutes.
    Let stand 5 minutes before cutting.
    Garnish with green onions and pimentos, if desired.
    Refrigerate any remaining pie.

    Serves 12.
