    Crepes

    For some reason, a few people think that crepes are difficult to make. Quite the contrary, however! They are very similar to pancakes, although the batter is a bit thinner, and you want to make your crepes thinner and longer.


    List of Ingredients


    • 1 cup all-purpose flour
    • 1/2 teaspoon white sugar
    • 1/4 teaspoon salt
    • 1 cup milk
    • 1 egg
    • 1/2 teaspoon vanilla
    • 1/4 teaspoon cinnamon


    Instructions


    1. Combine flour, sugar and salt in a bowl. Make a well in the center of the flour and add the milk,egg, cinnamon, and vanilla. Beat well to combine.

    2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
      Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

      YIELD: 6 crepes


    Final Comments


    This is a recipe I enjoy sometimes as a light dinner. I like to roll the crepes up with fruit, and top with some whipped cream. However, the possibilities are limited only by your imagination.
