This is a delicious onion casserole that goes great with any grilled dish. My sister made it for the Fourth of July, and everyone loved it. Be sure to use Vidalia onions; their natural sweetness is wonderful!

    • 4 large Vidalia onions, quartered

    • 1 tube Ritz Crackers, crushed
    • 1-1/2 cups grated Cheddar cheese

    Instructions

    1. Boil onions until tender; drain. Heat 4 tablespoons buttr in a skillet & saute the
      onions.
    2. Beat the eggs & milk together. Add the onions, & 1/2 the cracker
crumbs, the cheese & salt and pepper to taste.
    3. Bake in a buttered casserole dish at 375
      for 35 minutes.

    Final Comments

The onions in this recipe carmalize, and turn quite sweet. Those of you who have ever tasted Vidalia onions know how delicious they can be, and this recipe is a good example of onions at their best.
