    List of Ingredients

    1 cup water
    1/2 teaspoon salt
    1 cup instant rice -- uncooked
    2 tablespoons margarine -- melted
    2 teaspoons minced onion -- dried
    3/4 cup peas -- June peas, frozen, from 1 pound bag
    1/2 cup Bisquick® baking mix
    1/2 cup Parmesan cheese -- freshly grated
    1 cup skim milk
    2 eggs
    1/8 teaspoon pepper

    Preheat oven to 400 degrees F. Spray a pie pan with nonstick cooking spray.

    Heat water and salt to boiling in 2-quart saucepan; remove from heat and stir in rice. Cover and let stand 5 minutes.

    Stir margarine, onion and peas into rice. Spoon into pie pan.

    Stir remaining ingredients in medium bowl with a wire a whisk until well mixed.

    Pour mixture into pie pan.

    Bake 24 to 28 minutes or until a knife inserted in center comes out clean. Sprinkle with additional Parmesan cheese, if desired.

    Serves 6.
