    Three Egg White Cake

    List of Ingredients

    2 1/4 cups cake flour
    1 1/3 cups sugar
    2 1/2 teaspoons baking powder
    1/2 teaspoon salt
    1/2 cup shortening -- softened
    2/3 cup milk
    1 1/2 teaspoons vanilla
    3/8 cup egg whites -- 3 egg whites

    Preheat oven to 350 degrees F. Grease and flour two 8-inch cake pans or a 9 x 13-inch cake pan.

    Combine dry ingredients. Add shortening, 2/3 cup milk and vanilla. Beat 2 minutes and add another 1/3 cup milk. Beat 2 minutes more. Pour batter into prepared pans.

    Bake layer cake pans for 30 to 35 minutes and the 9 x 13-inch pan for 35 minutes.

    The cake will test done when golden brown and a toothpick inserted in center comes out clean.

    Miracle Marble: Follow above recipe except pour 2/3 of batter into prepared pans. Melt 1 ounce chocolate and mix with 1/4 teaspoon baking soda and 2 tablespoons warm water. Pour here and there over white cake batter Cut through with a knife several times for a marbled effect. Bake. Cool. Frost with chocolate icing.
