    Cran-Apple Cake with Caramel Sauce

    2 cups chopped apples
    1 cup fresh cranberries -- chopped
    1 egg
    3/4 cup brown sugar, packed
    1/4 cup corn oil
    1 cup flour
    1 teaspoon cinnamon
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1/4 cup chopped nuts
    Sauce
    2/3 cup brown sugar, packed
    1 tablespoon cornstarch
    1/2 cup half and half
    1 tablespoon margarine
    1/2 teaspoon vanilla

    Combine apples, cranberries and egg and mix well. Stir in brown sugar, oil, flour, cinnamon, baking soda, salt and nuts; mix until just blended. Lightly grease a microwave safe 8 or 9-inch cake pan. Pour batter into prepared pan.

    Microwave on high, uncovered, 7 to 8 minutes or until no longer doughy. Rotate pan once or twice while cooking. Cool.

    Combine brown sugar, cornstarch, half and half and margarine in a 2 cup glass measure. Mix well.

    Microwave on high uncovered 1 1/2 to 2 minutes or until mixture boils. Stir once while cooking. Add vanilla. Serve warm with cake.

    Serves 12.


    NOTES : Can cook in a microwave convection oven. Prepare the sauce first. Preheat oven to 375 degrees F. Spread batter in a greased 8-inch square baking dish. Combination bake (low mix or about 10%) 18 to 22 minutes or until no longer doughy.
