    Here you go!! Authentic Pastitsio Recipe....Authentic Pastitsio Recipe

    1/2 cup butter
    2 lbs ground beef (I sometimes sub lamb)
    1 onion chopped
    1 cup dry white wine
    2 tomatoes, peeled & thinly sliced
    3 tbsp chopped parsely
    1 1/2 tsp salt (or to taste)
    1 tsp cinnamon
    1/2 tsp pepper (or to taste)
    1 cup grated kefalotyri (you asked for
    authentic, , you can sub Parmesan)
    3 tbsp bread crumbs
    l pound macaroni, preferably Ziti
    4 egg whites (reserve yolks for sauce)
    1/2 cup butter
    Sauce.... to follow

    Heat 1/2 cup butter & brown meat. Then push meat to one side of pan & add onion. Saute
    onion til soft. Stir onion & meat together. When meat begins to sizzle, add wine. Stir &
    add tomatoes, parsley, salt cinnamon & pepper. Simmer, covered, for 1/2 hour. Add
    2 tbs cheese & bread crumbs. Stir & let stand. Cook macaroni in boiling salted water for 10
    minutes. Drain well. Stir the egg whigtes into the macaroni along with 1/2 cup butter &
    all but 2 tbsp of the remaining cheese. Toss to combine.

    Make the sauce.

    Place half the macaroni in a 9 X 13 inch baking pan & cover with the meat mix. Layer
    the rest of the macaroni onto the meat mix & cover with the sauce. With a spatula, push
    some of the sauce around the inside of the pan. Sprinkle the rest of the cheese over
    the top. Bake in preheated (350) oven until the top is golden & the sauce set, about 45
    minutes. Remove from the oven & let stand 10 - 15 min before cutting.

    Serves 24 as first course, or 12 as a main dish.

    Sauce:
    6 tbsp butter
    6 tbsp flour
    2 cups boiling chicken broth or bouillon
    l2 cups milk, warmed
    4 egg yolks, beaten

    In a suace pan, melt buter over low heat. Using a wire whisk, stir in flour & blend well. Remove from heat. Gradually stir
    in broth & milk; then stir vigorously. Return to heat & cook, stirring constantly, until sauce is thick & smooth.Stir a bit of
    the hot sauce into the egg yolks, Stir yolk mixture into sauce & cook over very low heat for 2 minutes, stirring constantly.
