BEEF BARLEY SOUP

Recipe Introduction
A delicious hardy soup made from a recipe of Louri's mother
List of Ingredients
1 and 1/2 pounds of lean ground beef
2 cups thinly sliced carrots
1 cup chopped onion
1 cup sliced celery
1/2 cup chopped green pepper
7 to 8 cloves of garlic, chopped
3 (three) 14 oz cans of beef broth
1 (one) 28 oz can of diced tomatoes
1 (one) 8 oz can of tomato sauce
3/4 cup of quick cooking barley (after cooking, it swells to 2 to 3 cups) More, the better!!
2 bay leaves or dried chopped basil
Worcestershire sauce to taste (I use about 1/4 cup or more)
Dried oregano to taste
pepper/salt
In large pan, cook beef, carrot, onion, celery, green pepper and garlic till tender. (You may have to drain, but all the good nutrients are in there, so don�t drain it all)
Stir in beef broth and all remaining ingredients. Bring to a gentle boil, then simmer with a lid for about an hour.
